Roast Beef Sweet Pepper Hash

Serves 8

Ingredients:

3 lb chuck roast
2 teaspoons ground sage
1 teaspoon ground black pepper
2 teaspoons garlic salt
10 red-skinned potatoes
1 green sweet pepper
1 red sweet pepper
1 yellow onion
3 tablespoons olive oil
Salt
3 cups shredded pepper-jack cheese

Directions:

1. Place chuck roast, ground sage, ground pepper and garlic salt in crock pot. Set to low and cook for 8 hours. Allow roast to cool and then shred.

2. Preheat oven to 375° F.

3. Place cubed potatoes, chopped peppers and yellow onion in a mixing bowl and drizzle olive oil over top. Sprinkle salt and pepper over vegetables and toss to coat.

4. Place potatoes and peppers on baking sheets. Place in the oven and bake for 25 minutes.

5. In a large skillet, warm shredded roast beef with vegetables on medium heat.

6. Spoon beef and vegetable hash onto serving plates and top with shredded pepper-jack cheese.
