White Fish Tacos with Chipotle Sour Cream

Serves 4

Ingredients:

1 cup sour cream
1 can chipotle chile in adobo sauce
2 tablespoons fresh lime juice
1 1/4 teaspoon salt
2 teaspoons ground cumin
1 teaspoon chipotle chile powder
1 1/2 Ib. skinless cod fillets
2 teaspoons vegetable oil
12 flour tortillas
1 1/2 cups shredded green cabbage

Directions:

1. In a small bowl, combine sour cream, chopped chipotle chiles, lime juice and 1/4 teaspoon of the salt. Stir well and set aside.

2. Combine cumin, chile powder and remaining 1 teaspoon salt together in a separate bowl. Season cod with the spice mixture.

3. Pour vegetable oil in a large nonstick skillet, bring to medium heat. Once hot, place cod in skillet. Cook for 8-10 minutes, flipping cod once. Remove cod from skillet. Cut into small pieces.

4. Place cod in warmed tortillas. Top with cabbage and sour cream-chipotle sauce.
