Cheesy Chicken Pesto SandwichesServes 4 |
Ingredients:
2 tablespoons olive oil | 1 teaspoon chopped garlic | 8 slices sourdough bread | 1/2 cup grated asiago cheese | 2 tablespoons prepared pesto | 1/4 teaspoon ground black pepper | 2 boneless, skinless chicken breasts, halved | 12 slices fresh mozzarella cheese | 2 tomatoes, sliced | Directions:- In a large skillet, stir together half of the olive oil and half of the garlic over medium heat. Once hot, add 4 slices of bread. Toast for 6 minutes, flip halfway. Remove toasted bread from pan. Add in the remaining olive oil and garlic, repeat with remaining slices of bread slices. Sprinkle half of the asiago on top of the bread.
- In the same skillet, stir together the pesto and black pepper. Add the chicken and coat evenly in the pesto. Cook for 8-10 minutes, until chicken is browned, flip halfway. Transfer chicken to cutting board. Slice chicken into long strips.
- Place three slices of mozzarella on each bread slice. Place tomato slices on top of mozzarella.
- Place chicken on top of tomato slices and sprinkle the remaining asiago cheese over top. Combine each of the sandwich halves to create four sandwiches and enjoy!
