Spicy Chicken and Mushroom ChiliServes 2 | Hearty, wholesome and absolutely delicious.
Ingredients:
1 lb boneless, skinless chicken thighs, chopped | 1/2 lb sliced mushrooms | 2 cans tomatoes with juice, 14.5 oz. each | 1 jalapeno pepper, seeded and diced | 1 can red kidney beans, rinsed, 15.5 oz. | 1 cup frozen corn | 2 teaspoons chili powder | 1 teaspoon ground cumin | 2 cloves garlic, crushed | 1/2 cup water | Salt, to taste | Ground black pepper, to taste | Directions:- Bring a large non-stick skillet to medium-high heat.
- Once hot, add chicken, mushrooms, tomatoes, jalapeno, beans, corn, chili powder, cumin, garlic, and water. Bring to a simmer, then reduce heat to medium-low. Cook uncovered for 15 minutes.
- Use a ladle to transfer chili to serving bowls and season with salt and pepper.
