Spicy Chicken and Mushroom Chili

Serves 2 | 

Hearty, wholesome and absolutely delicious.



Ingredients:

1 lb boneless, skinless chicken thighs, chopped
1/2 lb sliced mushrooms
2 cans tomatoes with juice, 14.5 oz. each
1 jalapeno pepper, seeded and diced
1 can red kidney beans, rinsed, 15.5 oz.
1 cup frozen corn
2 teaspoons chili powder
1 teaspoon ground cumin
2 cloves garlic, crushed
1/2 cup water
Salt, to taste
Ground black pepper, to taste

Directions:

  1. Bring a large non-stick skillet to medium-high heat.
  2. Once hot, add chicken, mushrooms, tomatoes, jalapeno, beans, corn, chili powder, cumin, garlic, and water. Bring to a simmer, then reduce heat to medium-low. Cook uncovered for 15 minutes.
  3. Use a ladle to transfer chili to serving bowls and season with salt and pepper.
