Pineapple Coleslaw

Serves 1 bowl | 

Sweet, tangy and absolutely scrumptious.



Ingredients:

3 slices pineapple
2 tablespoons chopped green bell pepper
1/2 cup peeled, diced apple
1 teaspoon sugar
1 teaspoon salt
1/4 cup vinegar
3 cups shredded cabbage
1 cup shredded carrot

Directions:

  1. In a large bowl, mix together green bell pepper, apple, sugar, salt, vinegar and cabbage. Let stand for 5 minutes, allowing flavors to blend.
  2. Top with shredded carrots and pineapple, then serve.
