Toasted Corn SaladServes 4 | The best side dish for picnics and BBQ's.
Ingredients:
1 tablespoon olive oil | 2 tablespoons lime juice | 1/4 teaspoon hot sauce | 1 teaspoon minced garlic | 1/4 teaspoon salt | 1 cup fresh corn | 1/2 cup diced red bell pepper | 1/2 cup diced red onion | 1 cup halved cherry tomatoes | 1 teaspoon fresh oregano | Directions:- In a small bowl, whisk together olive oil, lime juice, hot sauce, garlic and salt; set aside.
- In a dry skillet, toast corn for about 2 minutes, stirring frequently until golden. Place corn in a medium size bowl.
- Add pepper, onion, tomatoes and oregano; toss to combine.
- Add in olive oil-lime mixture; stir to combine. Let stand for five minutes before serving.
