Lightened Mashed Potatoes

Serves 8 | 

These easy-to-fix mashed potatoes are lightened with cottage cheese and skim milk. You'll love the rich taste.



Ingredients:

2 pounds small sized red potatoes
Kosher salt
16 ounces low-fat cottage cheese
2 tablespoons unsalted butter, softened
2 tablespoons fresh chives, finely chopped
2 tablespoons skim milk
black pepper, freshly ground

Directions:

  1. Place potatoes into a medium saucepan and cover with 1 inch of water. Salt potatoes, and bring water to a boil. Reduce temperature, and simmer potatoes for about 15 minutes or until tender. Drain potatoes.
  2. While potatoes are cooking, puree half of the cottage cheese in a blender and set aside.
  3. Place cooked potatoes into a large bowl. Add pureed and non-pureed cottage cheese, butter, chives and milk to bowl; mash to desired consistency. Season with salt and black pepper.
