Crispy Herbed Chicken
Serves 4 |
|4 slices white bread, toasted |
|1/2 cup fresh flat-leaf parsley, rinsed and dried |
|1 clove garlic, peeled and chopped |
|1/4 teaspoon salt |
|1/4 teaspoon black pepper |
|1 tablespoon olive oil |
|1/4 cup Dijon mustard |
|4 chicken breasts, boneless, skinless,6 oz. each |
- Preheat oven to 400ºF.
- In a food processor, pulse bread, parsley, garlic and salt and pepper until coarse crumbs form. Add the oil and pulse to combine. Transfer to a plate.
- Spread the mustard over chicken; dip chicken in the breadcrumb mixture, pressing gently to ensure that the breadcrumbs adhere to chicken.
- Place on a baking sheet. Bake until chicken is golden brown and fully cooked through, 18 to 20 minutes.
