Garlic-Rosemary Roasted Pork Loin

This delicious roast can rival beef pot roast.
Serves 10 | 


3 lb boneless pork loin roast
4 teaspoons chopped fresh rosemary
5 cloves garlic, pressed
2 teaspoons coarse salt
1 teaspoon ground black pepper
Fresh rosemary sprigs, for garnish


  1. Preheat oven to 400° F.
  2. Line a large roasting pan with foil.
  3. In a bowl, mix together rosemary, garlic, salt and black pepper. Using fingertips, rub rosemary-garlic mixture all over pork. Set pork, fat side down, in pan.
  4. Place pan in oven and roast for 30 minutes. Turn roast then continue cooking for about 20 minutes longer. Remove from oven and let rest for 10 minutes.
  5. If there is any remaining pan juice in the roasting pan, pour into a small saucepan then set over low heat to keep juices warm.
  6. Cut pork crosswise into slices then arrange on a platter. Pour juices over pork, garnish with rosemary sprigs then serve.
