Mixed Green Salad with Feta and Blueberries

A healthy and yummy spring themed salad.
Serves 4 | 


1 1/2 tablespoons red wine vinegar
3 tablespoons olive oil
1 teaspoon honey
1 bag baby salad greens, 5 oz.
1/2 cup crumbled feta cheese
1 1/2 pints blueberries
1/4 cup pine nuts, toasted
Salt, to taste
Pepper, to taste


  1. Whisk red wine vinegar, oil and honey in small bowl. Season to taste with salt and pepper.
  2. Combine baby salad greens, feta cheese and blueberries in large bowl. Drizzle with dressing, toss to coat.
  3. Sprinkle pine nuts over salad and serve.
