Simple Clementine Cake

A go-to classic for all cake lovers.
Serves 1 cake | 


For Cake:
2 cups flour
3 clementines, washed, stemmed and quartered
2 sticks butter
2 teaspoons baking powder
1 1/2 cups sugar
3 eggs
1/2 teaspoon salt
For Icing:
1 1/3 cups powdered sugar
2 teaspoons clementine zest
2 tablespoons butter
2 tablespoons clementine juice


  1. Preheat oven to 350° F. Grease a bundt pan with cooking spray.
  2. Place clementines into a food processor. Sprinkle sugar over top and process until smooth.
  3. Once smooth, add eggs and butter, process until mixture is smooth. Add baking powder and flour, process mixture until well combined.
  4. Pour cake mix into bundt pan. Place pan into oven and bake for 50 minutes. (Top should be golden brown) Allow to rest for 10 minutes to cool.
  5. As cake is baking, combine clementine juice and zest, butter and powdered sugar in a mixing bowl. Blend together until icing is smooth.
  6. Pour and spread icing on top of cooled cake and enjoy!
