Lightly Browned Ocean Perch

Serves 4 | 

Ingredients:

1 cup flour
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon chile powder
4 perch fillets
2 tablespoons butter
2 tablespoons fresh lemon juice

Directions:

  1. Whisk together flour, salt, ground black pepper and chile powder in a bowl. Gently press perch fillets into flour mixture to coat, shaking off any excess flour.
  2. Heat butter in a skillet over medium heat until butter is foaming. Place fillets in skillet and cook for 2 minutes per side. (Fillets should be a light golden brown)
  3. Transfer cooked fillets to a plate, squeeze lemon juice over top and serve.
