Cinnamon Swirl Peanut Butter Apple Cake

Airy, light and positively delicious!
Serves 9 squares | 

Ingredients:

1 apple, peeled and chopped
1/4 cup applesauce
1 tablespoon pure maple syrup
1/3 cup coconut sugar, plus more for swirl
1/2 teaspoon vanilla extract
1/2 cup smooth peanut butter, plus 1 tablespoon for swirl
1 egg
1 cup oat flour
1 teaspoon ground cinnamon, plus more for swirl
1/2 teaspoon baking soda
1/2 teaspoon salt

Directions:

  1. Preheat oven to 350° F. Line an 8x8 baking dish with parchment paper.
  2. Combine the chopped apple, applesauce, maple syrup, coconut sugar, vanilla extract, peanut butter and egg in a large mixing bowl. Stir together until well incorporated.
  3. In a separate smaller mixing bowl, combine the oat flour, cinnamon, baking soda and salt. Stir together well.
  4. Add the flour mixture into the apple mixture and stir until well combined.
  5. Pour the batter into the baking dish. Spoon the extra peanut butter in the middle of the batter. Sprinkle a little extra coconut sugar and ground cinnamon over the top. Use a toothpick to swirl the peanut butter, coconut sugar and cinnamon.
  6. Place the baking dish into the oven and bake for 18 minutes.
  7. Allow to cool and cut into 9 squares and enjoy!
