Pumpkin Smores Cookies

A sweet trifecta of chocolate, marshmallows and pumpkin.
Serves 12 | 


1/2 cup almond butter
1/4 cup pumpkin puree
1/2 cup light brown sugar
1 teaspoon vanilla extract
1 egg
1/4 cup almond flour
1/4 teaspoon salt
1/2 teaspoon baking soda
2 teaspoon pumpkin spice
1/2 cup mini marshmallows
1/2 cup semi-sweet chocolate chips


  1. Preheat oven to 375° F. Line a baking sheet with parchment paper.
  2. Combine pumpkin puree, brown sugar, vanilla extract and the egg in a mixing bowl. Stir together until combined. Set aside.
  3. In a separate mixing bowl, combine the almond flour, salt, baking soda and pumpkin spice. Mix together until well combined.
  4. Pour the flour mixture into the pumpkin mixture and stir together until well mixed. Fold in the chocolate chips and stir until well distributed.
  5. Place 2 marshmallows onto a spoon and scoop out cookie dough. Place the cookie dough on the baking sheet. Repeat with remaining marshmallows and cookie dough, until there are 12.
  6. Place the baking sheet into the oven and bake for 10-12 minutes, until marshmallows are gooey, and the chocolate chips are just melted.
  7. Remove from the oven, let cool for 5 minutes and enjoy!
