French Vanilla Frozen Custard

Rich, creamy and packed with vanilla goodness.
Serves 6 | 

Ingredients:

6 eggs
1 3/4 cups heavy whipping cream
1 cup erythritol
1 vanilla bean

Directions:

  1. Pour the eggs and heavy whipping cream into a medium pot, bring to low heat. Stir continually until combined.
  2. Add in the erythritol and stir until dissolved.
  3. Remove the pot from the heat.
  4. Slice the vanilla bean in half lengthwise and scrape out the vanilla.
  5. Add the vanilla scrapings to the pot and stir together.
  6. Place the lid on the pot and transfer to the refrigerator to chill for two hours.
  7. Pour the custard into the ice cream maker. Follow the instructions to churn.
  8. While the custard is in the ice cream maker, line a bread loaf pan with parchment paper.
  9. Pour into the bread loaf pan. Place into the freezer for several hours until very firm.
  10. Spoon frozen custard into serving bowls and enjoy!
